The Hawaiian style teriyaki sauce/marinade we used for the chicken skewers sold at Open House from 2003-2014.
Ingredients:
- soy sauce: 3-4 gallons
- sugar: 3-4 gallons (needs to be 1:1 ratio with soy sauce) (25-pound bag should suffice)
- green onions: 1 bunch/gallon of sauce
- garlic: 1 head/gallon of sauce
- ginger: 1" piece/gallon of sauce, peeled and cut into rough slices, ~5mm thick (1:1 ratio with the garlic is more important than exact measurement)
Steps:
- Heat soy sauce to a simmer (you will want to only fill the pot 1/2 way)
- Slowly add in sugar until a 1 : 1 ratio of soy to sugar has been reached
- Keep adding sugar until you can't add any more
- Add a little bit more sugar for good measure
- Dice up two stalks of green onion, one bunch garlic and equivalent amount of ginger for each gallon of sauce and add to the mixture.
- Let simmer for 10-15 minutes
